For burn protection, the control knobs used to adjust burner levels are heat resistant. Cookware on the top sits on heavy-duty cast iron grates. In these grates, aeration bowls direct heat to the surface, while a crumb tray catches debris to ease cleaning.The convection oven in the base of this Wolf C36C-6B restaurant range uses fans to evenly distribute heat throughout the chamber, and with this uniform distribution, the unit can quickly bake product. Adjustable on the thermostat, the temperature can be set between 250 and 500 degrees Fahrenheit, while the unit includes three oven racks and accommodates sheet pans side-to-side.
